This delicious experiment came from our friendship with Carla and Buster, the people behind Rooftop Smokehouse. We applied the cold smoking techniques they use in their shop in Barcelona to our PICUAL, and the result is a surprising oil that provides a flavour accent to fish, meat or even vegetables.
Origin: Trujal de la Loma organic olive grove in Ubeda (Jaén).
Process: extraction at 24º, filtered and cold smoked with oak wood.
